Why does your EVOO taste peppery?

Peppery is the taste of freshness — it's oleocanthal, a natural compound found in high concentrations only in recently pressed, high-quality oil.

Why does a harvest date matter?

A harvest date is the only honest answer to "how fresh is this" — olive oil starts losing flavor and nutrients the moment it's pressed.

How do I store olive oil?

Store it away from heat and direct light — ideally somewhere cool and dark. Though we understand if it never makes it past the counter.

What makes California EVOO different?

California olive oil is held to some of the strictest freshness and purity standards in the world — and unlike most imported oil, it doesn't spend months in transit before it reaches you.

Can i cook my evoo on high heat?

Yes — extra virgin olive oil handles high heat better than most people assume, though some heat-sensitive polyphenols do fade the hotter and longer it cooks, so we still save the finest pour for finishing, uncooked.

Why is everyone obsessed with EVOO?

Because it's one of the few ingredients that's both an everyday staple and genuinely good for you — rare enough on its own to earn the obsession.

What does "certified extra virgin" actually mean?

"Extra virgin" isn't just a name on the bottle — it means the oil was cold-extracted with no heat or chemicals and passed strict chemical and taste testing to earn that title, and much of what's sold as "extra virgin" never actually meets that bar; ours is certified by the California Olive Oil Council, so it's verified, not just claimed.

Single-source vs. single-origin — what's the difference?

Single-origin means the oil comes from one region, but possibly many different farms. Single-source means it comes from one farm — ours. Every bottle is grown, harvested, and pressed from our grove alone, not blended with fruit from anywhere else.

What does "acidity" mean?

Acidity measures how much the oil's fat has broken down into free fatty acids — the lower the number, the fresher and higher quality the oil. To legally be called extra virgin, olive oil must fall below 0.8% acidity, the strictest standard of any grade. It's one of the key numbers our California Olive Oil Council certification verifies.

i see you’re “Third Party Tested”, what does that mean?

Anyone can print "extra virgin" on a label — third-party testing is what proves it's true. An independent lab checks our oil's acidity, oxidation levels, and flavor against the legal standards for Extra Virgin, so you're not just taking our word for it.
